Farm-Fresh Goose Eggs
Many people have never had the chance to try a goose egg, since they are not as common to find in stores as chicken or duck eggs. We absolutely love them, and are proud to offer our fresh goose eggs for sale when they are in season. They are incredibly rich, nutritious, and one of the best eggs for baking and custard making you’ll ever use!
Goose eggs are larger and more nutrient-dense than chicken eggs, with a very high yolk-to-white ratio (when you crack one open, you will find that it’s mostly yolk inside!) Because of this, many bakers and chefs prefer to use goose eggs when available instead of chicken eggs.

Pasture-raised — Our geese roam freely on grass and forage naturally.
Fresh — Collected daily during laying season (typically early March through June).
Very Large — One goose egg is roughly equal to about 3 chicken eggs.

Availability
Geese are seasonal egg layers, meaning they only lay eggs for a few months out of the year. We typically have fresh eggs available from early spring through early summer. When they’re in season, we offer them for local pickup or shipping to anywhere in the US.
How to Use Goose Eggs
Substitute 1 goose egg for 2–3 chicken eggs in most recipes.
Perfect for scrambled eggs, omelets, frittatas, quiches and homemade pasta.
In addition to our baked goods, our absolute favorite thing to make with fresh goose eggs is homemade frozen custard. The thick yolk of the goose egg makes for a very silky and creamy ice cream that might be the best you’ve ever tasted!
